Jotam Bergfreund studied Food Science and Engineering at ETH Zürich in Switzerland and at Wageningen University and Research in the Netherlands. He received his Ph.D. in Food Processing and Engineering (Prof. Peter Fischer and Prof Erich J. Windhab) with a special focus on adsorption phenomena and rheology in emulsions and foams. Jotam collected a broad knowledge of the adsorption, network formation, and functionalities of surfactants, particles, and proteins to fluid interfaces. 

With one year of industry experience, Jotam returned to ETH Zürich as a Post-Doc, working on a collaborative project between the Laboratory of Exercise and Health (Prof. Katrien de Bock) and the Sustainable Food Processing Laboratory (Prof. Alexander Mathys). His current research involves extracting and refining plant proteins from food side streams to develop healthy plant-based dairy products, primarily focusing on oat and potato side streams.
